Snap Pea & Radish Skyr Salad

Description

Mint, basil and bit of garlic get mixed with smooth & creamy Icelandic Provisions Plain Skyr to create a wonderful bright fresh dressing that not only is healthy but full of flavor.

Ingredients
Skyr Dressing:
1/2 cup
Icelandic Provisions Whole Milk Plain Skyr
Handful of basil leaves
Handful of mint leaves
1
Garlic clove
Salt and pepper
to taste
1 tbsp
Oil of choice
1 tsp
White vinegar
Salad:
1/2 cup
Snap peas, trimmed and stringed
3-4
Radishes
1 tsp
Canola oil
Salt and pepper, to taste
Recipe
Step 1:
In a high-speed blender, add the skyr, basil leaves, mint leaves, sliced garlic clove, salt, black pepper, oil of choice and white vinegar. Blitz everything until creamy and smooth.
Step 2:
Thinly slice the snap peas and set aside. Chop the radishes into matchstick sized strips. Combine the sliced snap peas and sliced radishes with canola oil a pinch of salt and pepper and give everything a good mix.
Step 3:
In your desired dish/dishes, pour the green herb dressing evenly between them. Top each plate with a heap of the snap pea radish salad. Finish with a pinch of salt, pepper and a drizzle of oil. Enjoy!
