Chopped Golden Goddess Salad

Description

The ultimate chopped salad made with Icelandic Provisions 30oz Whole Milk Plain Skyr.

Pro tip: chop everything SUPER small and eat with a spoon to get a bit of everything in each bite.

Ingredients
Dressing:

Medium Golden Beet, peeled and grated
1/3 cup
Icelandic Provisions Whole Milk Plain Skyr
2 tbsp
Champagne vinegar
1.5 tbsp
Honey
2.5 tbsp
Dijon mustard
2/4 cup
Olive oil
1 tbsp
Peperoncini liquid
Salad:
1/2
Green cabbage, chopped
1
Iceberg lettuce, chopped
head
3
Persian cucumbers, chopped
1
Cherry tomatoes, quartered
Pepperoncini, chopped
1
Lemon
6 ounces
Turkey breast
6 ounces
Calabrese
5
Scallions
green parts chopped
1/4 cup
Dill, chopped
Cubed Parmesan Reggiano
Recipe
Make the
Add the skyr, beet, pepperoncini liquid, olive oil, honey, dijon and vinegar to a blender. Blend until smooth season to taste.
Make the
Add the cabbage and iceberg to a bowl, squeeze in 1/2 lemon or the whole, depending on your taste and add a bit of salt. Add remaining ingredients. Drizzle the dressing, season with black pepper to taste.
