Chocolate Covered Berry Skyr Clusters

Summer strawberries and  raspberries get folded into smooth & creamy Icleandic Provisons Plain Low Fat Skyr and then frozen. A quick dip into dark chocolate creates a magic hard shell that crackles with every bite. Top with freeze dried raspberries and flaky salt for a perfect mid-day treat that will cool you down.

Serves 6

Ingredients
3/4 cup
Icelandic Provisions Plain Low Fat Skyr
1/4 tsp
Vanilla Extract
1 cup
Chopped Strawberries
1/2 cup
Raspberries
1/2 cup
Dark Chocolate, chopped
1 tsp
Extra Virgin Cold Pressed Coconut Oil
Freeze dried fruit, to top (optional)
Flaky Sea Salt, to top (optional)
Recipe
Step 1:
In a large bowl, mix skyr, strawberries, raspberries and vanilla extract. Gently mixed until just combined.
Step 2:
Portion out the skyr berry mixture into ¼ cup mounds onto a lined baking tray and freezer for at least 1 hour or until solid.
Step 3:
In a separate bowl add the chopped chocolate and coconut oil and microwave in 15 second intervals until just melted. Give the mixture a good stir until smooth and glossy.
Step 4:
Using a fork, dip the skyr berry clusters into the melted chocolate until fully coated. Place them onto a lined baking tray and top with flaky salt and freeze dried berries.
Step 5:
Chill in the freezer for about 10 more minutes and enjoy.
