Spicy Roasted Carrots with Lime Skyr

Olive Oil
1 tsp
Honey
1/2 tsp
Crushed Red Chile Flakes
1 Bunch
Skinny Rainbow Carrots
Peeled, Halved if Large
Kosher Salt

Plain Icelandic Provisions Skyr

Lime
Fresh Mint
Lime Wedges
Recipe
Step 1
Preheat oven to 425 degrees. In a small bowl whisk together olive oil, honey, and crushed chile flakes.
Step 2
Add carrots to a rimmed baking sheet. Drizzle with olive oil mixture, season with salt, and toss to combine.
Step 3
Roast 25 to 30 minutes, tossing once, until golden brown and tender.
Step 4
Add skyr to a small bowl. Using a rasp grater, add the zest of 1 lime. Add the juice of one lime, season with salt, and stir well to combine.
Step 5
Serve the carrots with lime yogurt, fresh mint, and lime wedges.
