Caesar Salad with Whisps Parmesan Crisps

 This creamy garlicky Caesar salad dressing is healthy, protein packed and absolutely delicious. The dressing is made primarily of Icelandic Provision Skyr instead of mayonnaise and flavored with tempered garlic, freshly grated parmesan and a hint of mustard. Substituting the majority of the mayo with skyr creates an equally delicious but much healthier Caesar dressing that pairs perfectly with the cheesy crunch breadcrumbs made with Whisps Parmesan Cheese Crisps. Toss a few Whisps into your salad for an extra crunchy textural salad that will be perfect to serve for lunch or dinner! 

Ingredients
3 cup
Chopped Romaine Lettuce
1/4 cup
Shaved Parmesan
Creamy Ceasar Skyr Dressing:
2 tbsp
Olive Oil
3
Garlic Cloves
minced
1/2 cup
Icelandic Provisions Plain Skyr
1/4 cup
Mayo
1 tbsp
Fresh Lemon Juice
1 tsp
Mustard
1/4 tsp
Salt
1 tsp
Black Pepper
1/3 cup
Grated Parmesan
Whisps Parmesan Breadcrumbs:
1/2 cup
Breadcrumbs
1/4 cup
Whisps Cheese Crisps
Recipe
Step 1:
Make the dressing: Heat up a few tablespoons of olive oil in a pan and toss the minced garlic until no longer raw, less than a minute. Set aside.
Step 2:
Combine the skyr, the olive oil garlic mixture, mayonnaise, lemon juice, mustard, salt, black pepper, and grated parmesan in a bowl until combined. Set aside
Step 3:
Make Whisps Parmesan Breadcrumbs: Combine the dry breadcrumbs and crushed up Whisps Cheese Crisps and set aside.
Step 4:
Top the romaine lettuce with the dressing, Whisp breadcrumbs and a few whole Whisps and give everything a good toss.
