Blue Cheese, crumbled

Icelandic Provisions Whole Milk Plain Skyr

Lemon Juice
1/4 Teaspoon
Garlic Powder
Salt and Pepper, to taste
For the wedge salad:
2 slices
Bacon
chopped
1/2 Head
Iceberg Lettuce
cut into wedges
1/4 Cup
Cherry Tomatoes
quartered
2 Tablespoon
Red Onion
finely diced
2 Tablespoon
Chives
minced
Recipe
Step 1:
In a small bowl, smash blue cheese into a paste, then whisk vigorously with skyr, lemon juice, and garlic powder until a smooth, creamy dressing forms. Season to taste with salt and pepper, and keep chilled in the fridge while you prep the salad.
Step 2:
Set a medium skillet over medium-low heat and add bacon. Cook, flipping halfway through, until golden brown and crispy, about 5 - 8 minutes. Transfer to a paper-towel lined plate to drain excess oil, then let cool to room temperature before chopping into bite-sized pieces.
Step 3:
Drizzle each wedge with half the dressing, then top with bacon, cherry tomatoes, red onion, and chives. Serve immediately and enjoy!
