Granola Cups

Description

The perfect bite sized snack that is high in protein! Fill with your favorite flavor of Icelandic Provisions Skyr.

Ingredients

2 Tablespoon
Rolled Oats
1 Tablespoon
Ground Flaxseed
1 Tablespoon
Chia Seeds
1/2 Teaspoon
Cinnamon
1/4 Teaspoon
Kosher Salt
1/4 Tablespoon
Melted Coconut Oil
1/3 Tablespoon
Honey
2- 5.3oz containers of Icelandic Provisions Skyr
Berries or fruit of choice for garnish

Recipe

Step 1:

Heat oven to 350°F. Oil a 12-cup muffin pan (preferably silicone), set aside.

Step 2:

To a large mixing bowl, add the oats, flaxseed, chia seeds, cinnamon, salt, and mix to combine.

Step 3:

Add the melted coconut oil and warmed honey to the same bowl, and mix until well combined.

Step 4:

Divide the mixture evenly between the prepared muffin cups.

Step 5:

Use a teaspoon or another small spoon of similar size to press the granola into the bottom and up the side of the muffin cups.

Step 6:

Place in the oven for 15-18 minutes, or until the edge starts to brown.

Step 7:

Remove and cool to room temperature before removing from pan.

Step 8:

Fill each cup with desired amount of skyr, garnish with fruit, and enjoy!
