Chop up the chocolate into shards.
Either in the microwave or on the stove, heat up the milk until it is scalding hot, almost boiling. Pour the milk over the chocolate and stir until a ganache forms.
Let this mix sit in the fridge for 15-20 minutes, or until the ganache is firm enough that you can scoop it into bite-sized truffles using a cookie scoop.
Top the truffles with either matcha and sesame seeds, or dip them in yogurt and crushed nuts. Or mix it up how you like! Store them in the fridge and serve whenever.
