
Calabrian Chili Skyr Potato Hash

Creamy, cool skyr is swirled with spicy, tangy Calabrian chili paste to create the perfect base for a crispy potato and onion hash. Finished with fresh scallions, a drizzle of Calabrian chili oil, and a sprinkle of salt and pepper, this bold and flavorful dish strikes the perfect balance of heat, richness, and crunch.

Small yellow wax potatoes, washed and cubed

Medium red onion, chopped

For Calabrian Chili Swirled Skyr
1 Cup
Icelandic Provisions Plain Whole Milk Skyr
1/4 Cup
Calabrian chili paste
1/2 Teaspoon
Kosher salt
1/4 Cup
Scallions, finely sliced
Recipe
Step 1
Add olive oil to a cast iron pan over medium high heat. Heat until the oil is hot and shimmering.
Step 2
Add the potatoes and onions to the pan. Toss occasionally and cook for 15–20 minutes, or until the potatoes are tender and the onions and potatoes are golden brown.
Step 3
Season with salt, pepper, and paprika. Remove from the heat and set aside.
Step 4
Spoon the skyr onto a serving plate and use the back of a spoon to spread it into a swooping swirl. Dollop the Calabrian chili paste over the skyr, then use a clean spoon or knife to gently swirl it in. Season lightly with salt.
Step 5
Top the skyr mixture with the hot potato hash and garnish with fresh scallions.
Step 6
Drizzle with additional Calabrian chili oil and serve immediately.
