Description

Looking for a great granola pairing with your everyday Skyr bowl? Alexis DeBoschnek shares her favorite recipe inspired by Icelandic Provisions’ Cherry & Black Currant Skyr. Great to make batches for a simple, nourishing, and protein-packed breakfast.

Ingredients

3 Cup
Old fashioned rolled oats
1 Cup
Unsweetened coconut flakes
1 Cup
Pecans, chopped
1 Teaspoon
Kosher salt
1 Teaspoon
Ground cinnamon
1/2 Teaspoon
Ground cardamom
1/2 Cup
Extra-virgin olive oil
1/2 Cup
Maple syrup
1/2 Cup
Dried cherries
1/2 Cup
Dried red currants

Recipe

Step 1

Preheat the oven to 300˚F.

Step 2

In a large bowl, mix the oats, coconut flakes, pecans, salt, cinnamon, and cardamom.

Step 3

Add the olive oil and maple syrup and stir until well combined.

Step 4

Transfer the granola to a parchment paper–lined baking sheet and smooth into an even layer.

Step 5

Bake for 25 minutes, then use a spatula to flip the granola over. Continue baking until golden brown and deeply aromatic, about 25 more minutes.

Step 6

Let the granola cool to room temperature and then add the dried cherries and dried red currants and use your hands to combine.
