Peppermint Skyr Bark

Description

A holiday treat with a skyr twist!

Serves: 4-6

Ingredients
2 - 5.3 oz ounces
Icelandic Provisions Traditional Vanilla Skyr
containers
11 ounces
Bittersweet Chocolate Chunks or Chips
2
Large Candy Canes, crushed
Recipe
Step 1:
Place the chocolate chunks in a microwave safe bowl and microwave for 1 minute. Wisk the chocolate a bit, then continue to microwave for 30-second intervals, mixing the chocolate in between until melted.
Step 2:
Place a piece of parchment paper on a large baking sheet. Pour all but 3-4 tbs of the melted chocolate onto the paper.
Step 3:
Using an offset spatula, spread the chocolate out into a thin rectangle that’s about 9x13 inches.
Step 4:
Place the baking sheet into the refrigerator for 15 minutes, or until the chocolate has become solid.
Step 5:
Remove from the fridge. Pour the skyr from both containers onto the center of the chocolate rectangle, then spread it out into an even layer over the chocolate.
Step 6:
Garnish the skyr with the crushed candy canes and a drizzle of the remaining chocolate. Please re-melt chocolate if needed.
Step 7:
Place the pan into the freezer for 1.5-2 hours, or until the skyr layer is frozen solid. Break the bark up into pieces and enjoy immediately.
