Recipe

Step 1:

Heat oven to 350°F. Spray an 8x8 baking pan cooking spray, then line with two pieces of overlapping parchment paper leaving an overhang.

Step 2:

For the crust: To a medium bowl add the crushed graham crackers and melted butter, and mix together until it resembles the texture of wet sand.

Step 3:

Pour out the crust mixture into the prepared pan and press firmly into the pan using a measuring cup. Place the pan into the oven and let bake for about 8 minutes, or until lightly browned and fragrant. Remove from the oven, and let cool completely.

Step 4:

For the filling: Reduce the oven’s temperature to 325°F. Place the skyr, cream cheese, and powdered sugar into a large bowl and beat together with a hand mixer, or by hand until smooth.Add the eggs one at a time until combined. Scrape down the sides of the bowl as needed, then mix in the vanilla extract and salt.

Step 5:

Pour the filling into the cooled crust and place into the oven for 35-40 minutes, or until the edges are set and the center jiggles ever so slightly.

Step 6:

Transfer the pan to a wire rack and let cool completely. Cover with plastic wrap, then place it in the fridge overnight, or until fully chilled. Cut into 9 equal-sized squares and enjoy!
