This is our extra creamy take on the classic lemon bar! These Lemon Skyr Bars are so easy to make and guaranteed to brighten up your day. Other recipes require you to zest and juice a lemon but with the addition of our Extra Creamy Lemon Skyr you can skip that step! We’ve already done the hard work for you because our Extra Creamy Lemon Skyr is made with fresh lemon juice and zest 🍋

Ingredients
1.5 Cup
Crushed Graham Crackers
6 Tablespoon
Salted butter, melted
2- 4.4 Ounces

Recipe
Step 1:
Heat oven to 350°F. Spray an 8x8 baking pan cooking spray, then line with two pieces of overlapping parchment paper leaving an overhang.
Step 2:
For the crust: To a medium bowl add the crushed graham crackers and melted butter, and mix together until it resembles the texture of wet sand.
Step 3:
Pour out the crust mixture into the prepared pan and press firmly into the pan using a measuring cup. Place the pan into the oven and let bake for about 8 minutes, or until lightly browned and fragrant. Remove from the oven, and let cool completely.
Step 4:
For the filling: Reduce the oven’s temperature to 325°F. Place the skyr, cream cheese, and powdered sugar into a large bowl and beat together with a hand mixer, or by hand until smooth. Add the eggs one at a time until combined. Scrape down the sides of the bowl as needed, then mix in the vanilla extract and salt.
Step 5:
Pour the filling into the cooled crust and place into the oven for 35-40 minutes, or until the edges are set and the center jiggles ever so slightly.
Step 6:
Transfer the pan to a wire rack and let cool completely. Cover with plastic wrap, then place it in the fridge overnight, or until fully chilled. Cut into 9 equal-sized squares and enjoy!
