Recipe
Step 1:
In a large bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and sugar. In another bowl, whisk together skyr, water, vanilla extract, and egg yolks.
Step 2:
Add wet to dry and stir until just combined; don’t overmix.
Step 3:
Beat egg whites until stiff peaks form, then gently fold into the batter to keep it light and airy.
Step 4:
Preheat your waffle iron thoroughly. Lightly grease if needed. Pour in ¾ cup of batter (or refer to your machine instructions for amounts), and cook until deep golden and crispy. Keep cooked waffles warm in the oven at 325°F on a wire rack while you make the rest. Serve immediately with maple syrup and enjoy!
