Skyr Holiday: Skyr-Nogg

This festive Skyr-Nogg cocktail was created by our collaborator and friend, Michelin-Star Chef Gunnar Karl Gíslason. It’s a Nordic twist on a holiday classic – SKAL! (CHEERS!)

Cinnamon Stick
Egg yolk
3/4 cup
1 cup
Aged Brennivín
1 cup
1 Cont.
Icelandic Provisions Plain Skyr

Lemon zest
Vanilla pod
Step 1
Bring milk, cloves, cinnamon and vanilla to boil and simmer for 30 sec. Cover and let stand for 10 minutes and strain.
Step 2
In a mixer whip egg yolks and ½ cup sugar until fluffy. Poor the milk mixture in slowly. Put in a pot and bring to about 170ºF for about 3 minutes or until it thickens a little.
Step 3
Add Aged Brennivín and cream to the mixture and cool down to about 37ºF.
Step 4
Whip skyr and ¼ cup sugar together and in a mixer blend into the rest of the cooled down mixture.
Step 5
Season with freshly grated nutmeg and lemon zest.
