Skyr Holiday: Skyr Panna Cotta, cranberries and Christmas cake ice cream

Ingredients
For panna cotta
:
1 cup
Milk
2 sheets
Gelatin
1.5 cup
Cream
1/2 cup
Sugar
1
Vanilla pod
1 cup
Icelandic Provisions Plain Skyr
1.5
Lemon
Juiced
For cranberries
:
9 ounces
Cranberries
1 cup
Water
1/2
Lemon
Peeled and juiced
For Christmas cake ice cream
:
3 cup
Milk
1.5 cup
Cream
1/2 cup
Egg yolk
2/3 cup
Sugar
1/3 cup
Glucose powder
1 tbsp
Milk powder
Pinch of
Salt
1 cup
Christmas cake
(I use ginger cake)
Recipe
Panna Cotta:
Step 1
Soak gelatin in cold water until soft.
Step 2:
Put milk, cream, sugar and vanilla pod cut in half in a pot and bring to boil.
Step 3
Dissolve the gelatin in the pot and cool down to approximately room temperature.
Step 4
Mix in the skyr using a hand blender.
Step 5
Season with lemon juice. n
Step 6
Put in small glasses and cool down.
Cranberries:
Step 1
Put water, sugar and cranberries in a pot and slowly simmer until nice and it has developed a jam like texture.
Step 2
Season with lemon juice and peel. Cool down.
Ice cream:
Step 1
Heat milk, cream, sugar and glucose until boiling.n
Step 2
Add milk powder and stir until dissolved.
Step 3
Blend in yolks and salt while stirring.
Step 4
Cool down, add Christmas cake and run through ice cream machine.
