Skyr Holiday: Skyr-Marinated Pork with Icelandic Style Holiday Garnish

For pork

2.2 pounds
Pork loin

Icelandic Provisions Plain Skyr
1 tsp
Salt
1 tsp
Angelica
Dried and powdered
1 tsp
Arctic thyme (or regular)
Dried and powdered
1 tsp
Lovage
Dried and powdered
For Crispy Potatoes
:

Potatoes (medium)
Thinly sliced using a mandolin
1/2 cup
Butter
Melted
2 tsp
Rosemary
Finely chopped
Salt
Frying oil
For creamy mushroom sauce
:

Shallot
1 clove
Garlic

1/2 lemon

For red cabbage
:
12 ounces
Red cabbage
Chopped

Green apple
One peeled, cored, and chopped; The other peeled and sliced into strips

1/4 cup
Red currant
1/4 cup
Raspberries
1/2 cup
Cherry vinegar

Cinnamon stick
1 tsp
Horseradish
Freshly grated
Parsley
Fresh
Pepper
Salt
For apple compote
:

Peeled, cored, and chopped
1/2 cup
Sugar
1/4 cup
Butter
1/4 cup
Icelandic Provisions Plain Skyr
Lemon juice
Salt
Recipe
Skyr-Marinated Pork:
Step 1
Preheat oven to 270°F.
Step 2
Mix Skyr and herbs and coat loin with mixture. Season with salt.
Step 3
Bake in oven at 270°F until core temperature has reached 125°F. Remove loin from oven and let sit for about 30 minutes at room temperature.
Step 4
Reheat oven to 410°F and bake loin again until it’s nicely caramelized on the outside and core temperature reaches 145°F.
Crispy potatoes:
Step 1
Mix the thinly cut potatoes with butter, rosemary and season with salt.
Step 2
Evenly spread the mix on a baking tray so it´s about 1 inch thick.
Step 3
Bake at 350°F until soft.
Step 4
Put pressure on the mixture while cooling down.
Step 5
Cut potatoes in ½ inch by 4 inch strips and fry in frying oil until crispy.
Mushroom sauce:
Step 1
Cut mushrooms into quarters and roast in a pan until nice and golden.
Step 2
Cut mushrooms into quarters and roast in a pan until nice and golden.
Step 3
Finely chop shallots and garlic and simmer slowly in pan until soft and they start to get a little color.
Step 4
Add mushrooms and cream to pan and reduce until nice and thick.
Step 5
Season with salt and lemon juice.
Red cabbage:
Step 1
Caramelize sugar and butter in a deep pan.
Step 2
Add cabbage, apple and berries, cinnamon stick and vinegar. Bring to simmer. Simmer until all juice has evaporated.
Step 3
Season with salt and pepper. n
Step 4
To garnish; In a clean bowl, mix some freshly cut apple strips and fresh parsley, season with freshly grated horseradish.
Apple compote:
Step 1
Caramelize sugar in a pan, add butter and mix in sugar.
Step 2
When nicely melted and mixed, add apples and cook until the mix looks like a nice compote.
Step 3
Cool down to room temperature and add Skyrn
Step 4
Season with some salt and lemon.
