Skyr Holiday: Skyr Cinnamon Christmas Cake

Ingredients
For cake
:
1 cup
Butter
2 cup
Sugar
1
Vanilla pod
3
Eggs
2 Cont.
Icelandic Provisions Plain Skyr
2 cup
Flour
1 tbsp
Baking powder
To taste
Salt
For cinnamon topping
:
1/2 cup
Sugar
3 tbsp
Cinnamon powder
1/2 cup
Butter
For cream
:
1 cup
Cream
1
Vanilla pod
1 Cont
Icelandic Provisions Plain Skyr
1/4 cup
Sugar
Recipe
The cake:
Step 1
In a blender mix butter, sugar and beans from 1 vanilla pod until light and fluffy.
Step 2
Add eggs one by one and mix well together.
Step 3
Add Skyr and then all the dry ingredients.
Cinnamon topping:
Step 1
Mix together in a bowl.
Step 2
Put half of the cake dough in a buttered tin and sprinkle half of the cinnamon topping over.
Step 3
Add the rest of the dough and again sprinkle the cinnamon topping over the top.
Step 4
Bake at 350°F for about 45-60 minutes, depending on the size of the tin.
Cream:
Step 1
Take vanilla beans out of pod and whip with the cream.
Step 2
When almost frim add Skyr and sugar and continue whipping until firm.
